2 cups peeled zucchini
1/2 onion grated
5 eggs, well beaten
1/2 cup shredded cheddar almond cheese
1 Tbsp parsley, chopped
4 Tbsp rice bread crumbs
Salt and pepper to taste

Directions:
Directions:
Steam zucchini until tender. Mash and drain. Combine with the rest of the ingredients except the bread crumbs. Pour into greased 8 x 8 pan and top with crumbs.

Bake at 350º for 45 minutes, or until completely set.
