2 1/4 c. flour
1 Tbsp pumpkin pie spice
2 tsp baking powder
1/2 tsp salt
1 c dried cranberries
2 eggs beaten
2 c sugar
1 2/3 c pumpkin puree- 15 oz can
1/2 c vegetable oil
1/2 c chopped walnuts

Directions:
Directions:
Heat oven to 350º Combine flour, spice, baking powder and salt in bowl; stir to blend the dry ingredients well. combine eggs, sugar, pumpkin and oil in a mixing bowl. Stir in the dry ingredients into the wet ingredients. Add cranberries and walnut, mix thoroughly. Spoon into two greased and floured 9x5x2 inch loaf pans. Bake at 350º for 55 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Let cool in pan for 20 minutes. Remove and let cool completely on rack.
