1/4 C of Currants or Raisins
1 Bunch of Kale
6 T of Balsamic Vinegar divided
1 T Rice Vinegar
2 T Olive Oil
2 T Honey
3/4 tsp Salt
1/8 tsp Pepper
1/4 C Pine Nuts or quartered Walnuts
Opt: Parmesan or Hard Cheese shavings

Directions:
Directions:
Soak currants or raisins overnight in 3 T of balsamic vinegar. Combine in large casserole or salad bowl: 3 T balsamic vinegar, rice vinegar, honey, olive oil, salt and pepper. Wash and remove center ribs and stem from kale. Cut crosswise into thin slices and pieces and add to mixture in bowl. Add drained raisins or currants. Let sit 30 mins. Sprinkle walnuts and opt. cheese
