3 Pints sliced mushrooms
6 T. butter
4 T. flour
2 cups light cream
2 egg yolks
Juice of one lemon
Salt & pepper to taste
Buttered fresh bread crumbs

Directions:
Directions:
Saute mushrooms in 2 T. butter 1 Pt. at a time.
You may need additional butter. Remove from pan
Make white sauce with remaining 4 T. butter and
flour and cream. Reserve a little cream to mix with the egg yolks to keep them from curdling. Add the lemon juice. Top with buttered bread crumbs and bake 350 for 30 minutes.
