2 cups all-purpose flour
1 1/2 teasp baking powder
3/4 cup sugar
1/2 cup unsalted softened butter
1 teasp lemon zest
1 teasp orange zest
1/4 teasp salt
2 large eggs
3/4 cup chopped walnuts or pecans
3/4 cup dried cranberries
12 oz white chocolate chips
dipping dark chocolate

Preheat oven to 350º and line a heavy baking sheet with parchment paper.

Mix the flour and baking powder in a medium bowl. In a separate large bowl, mix the sugar, butter, zests and salt - blend with an electric mixer until smooth. Beat in the eggs, 1 at a time. Add the flour mixture and beat just until blended. Stir in the nuts, cranberries and white chocolate chips. Dough will be sticky.

Form the dough into 13" long, 3" wide logs on the parchment paper - leave about 3" between the logs. Wet your hands to help form the logs and get them smooth.

Bake until light golden, about 30 min. Remove from oven and cool on cooling rack for 30 minutes. Place the logs on a cutting board. Using a sharp knife, cut the logs into 1/2" to 3/4" thick slices. Place the slices cut side down on the baking sheet. Bake until golden brown, 5-7 minutes, turn each piece and bake another 5-7 minutes.

Transfer to cooling rack and cool completely. Melt the melting chocolate as directed on the package. Dip half of the biscotti piece into the melted chocolate. Gently shake off the excess chocolate. Place biscotti on parchment paper and allow to set. Biscotti will peel easily off the parchment paper when dried.
