1 cup soy sauce
1/2 cup brown sugar
1/4 cup silver spring Wasabi Sauce (1 Tbsp Sauce/ 3 Tbsp for Beef)
2 lb beef tenderloin
4 scallions each cut into 4 inch lengths
1 each of Red, Green & Yellow peppers; cut into 3 inch strips or long enough to show color at the end of tenderloin roll
1 Tbsp olive oil
* can use some remaining scallion rings to garnish

In small bowl, whisk together soy sauce, brown sugar, and 1 Tbsp of Wasabi sauce, reserve.

Trim tenderloin of any fat/tissue. Cut crosswise into 1/4 in thick slices.

Place between plastic wrap and lightly pound until about 1/8 inch thick. Try to keep in retangular shape.

Dip one slice of beef in wasabi sauce, lay back down, spread 1/4 tsp wasabi sauce on beef, sprinkle with salt & pepper. Place scallion and pepper across the beef. Roll up lengthwise and skewer edges with 2 toothpicks. Set aside. Repeat with remaining beef.

Brush lightly with olive oil and sear in large skillet on med hi heat. Cook about 3 minutes til medium rare. Lightly brush with wasabi-soy mixture througout cooking - try to avoid getting too much in pan. In small saucepan bring remaining sauce to a boil, then place in bowl and garnish with remaining green onion rings. Cut beef into small pieces and serve with sauce.
