4 wild ducks
2 apples
celery
2 cans consomme, undiluted
1 can water

Sauce:
1-1/2 c. butter
2-3 c. sherry
1/2 c. bourbon
5 oz. jar currant jelly
4 T. worcestershire

Directions:
Directions:
Stuff ducks with apple and celery. Place breast down in dutch oven and pour in consomme and water. Cover tightly and cook for 3 hours at 350º. Duck should be very tender. Slice breasts away. Place duck breasts in greased, shallow casserole dish. Pour sauce over breasts. Cover and bake at 350º just until hot.

Sauce directions: In a saucepan, slowly heat butter, sherry, bourbon, jelly and worcestershire. If too thin, thicken with a little flour or cornstarch.

To serve place breasts on platter with rice and dribble a little sauce over meat. Sprinkle with crumbled bacon and pass remaining sauce in gravy boat.
