1 c. boiling water
3/4 c. shortening
1/2 c. sugar
1 tsp. salt
1 cake compressed yeast
1/2 c. lukewarm water
1 c. flour
1 c. mashed potatoes
2 beaten eggs
5-1/2 c. flour

Directions:
Directions:
Combine boiling water, shortening, sugar, salt. Cool to lukewarm and add yeast softened in lukewarm water. Mix to smooth batter with one cup flour. Stir in potatoes and eggs. Let rise 2 hours or until light and bubbly. Add remaining flour to make soft dough. Knead lightly on floured surface. Let rise again in greased bowl about 2 hours. Punch down, cover and place in refrigerator until ready to use. About 1-1/2 to 2 hours before serving, remove portion of dough and form into balls of desired shape. Arrange in pan and let rise until double in bulk. Bake in moderately hot oven (400º-425º) for 20-25 minutes.
