1 c. cake flour
1 tsp. baking powder
1/4 tsp. salt
4 eggs
3/4 c. sugar
1 tsp. vanilla

Directions:
Directions:
Sift together flour, baking powder and salt.

Beat 4 eggs till fluffy and add sugar. Fold dry ingredients into egg mixture and add vanilla.

Spread into jelly roll pan and bake at 400º for 13 minutes.

While cake is baking, sprinkle a tea towel generously with icing sugar. Remove cake from oven and immediately cut off crisp edges. Turn cake out at once onto tea towel. Peel off wax paper. Roll cake up carefully with tea towel. Cool. When ready to serve, carefully unroll the cake. Spread with your favorite jam. Roll up and sprinkle with icing sugar on top.
