Crabcakes:
1 lb. crab meat
1/2 c. onions chopped fine
1 hard boiled egg, grated or mash with fork
1/2 c. crushed saltines
1 large egg beaten 'til foamy
1-1/2 tsp. Worcestershire sauce
1-1/2 tsp. honey dijon mustard
Pinch cayenne
Salt to taste
Fresh ground black pepper to taste

Coating:
1/4 c. extra fine bread crumbs
1/8 c. extra fine grated parmesan cheese
1/2 c. flour in a bowl
1 beaten egg in a bowl

Remoulade Sauce:
1 large egg yolk
4 T. course grained creole mustard
1/3 c. white vinegar
4 tsp. paprika
1/8 tsp. cayenne
1-1/2 c. olive oil
4 T. horseradish
1 large clove pressed garlic
1/2 c. finely chopped garlic
1/2 tsp. celery seeds
3 T. fresh parsley (chopped)
3 T. ketchup
salt and pepper to taste

Gently mix crabcake ingredients with your hands. If mixture feels too wet to hold together, add a few more cracker crumbs. Form into golf sized balls and flatten. Coat in your flour, then egg, then mixture of bread crumbs and cheese. Fry quickly in hot vegetable oil about 2 minutes or each side. Do not them them burn! Serve with Remoulade sauce.

Blend remoulade sauce ingredients all together in a food processor and run on high for 3 minutes.
