2 cans whole kernel sweet corn
1 can black beans, rinsed and drained
1 cup chopped fresh tomatoes
1/2 cup chopped fresh cilantro
1 cup chopped green pepper
1 cup chopped red pepper
1/2 cup chopped red onion
1/2 cup chopped green onion
2 cloves garlic, finely minced
4 Tbl. olive oil
1 1/2 Tbl. white wine vinegar
dash of pepper sauce
salt and pepper to taste
1 1/2 teas. ground cumin

Directions:
Directions:
Place the corn, beans, tomatoes, cilantro, cumin, red pepper, green pepper, onions and garlic in salad bowl and mix well. Combine the oil, white wine vinegar and pepper sauce and pour them over the corn mixture and toss lightly. Add salt and pepper to taste!

We love this served as a salsa with corn chips! Also, for our taste buds, a little cilantro goes a long way so we use 1/4 cup!!
