1/2 cup sugar
6 tbsp flour
1/4 tsp salt
2 1/2 cups milk
2 egg yolks or 1 egg
1 tbsp butter
1/2 tsp vanilla
3 bananas
1 baked 9" pie shell
1/2 cup heavy cream whipped

Directions:
Directions:
mix sugar, flour & salt in top of double boiler. Add milk and cook over boiling water until thickened, stirring constantly. Cover and cook 10 more minutes, stirring occasionally.
Beat eggs and add a small amount of the milk mixture; return to double boiler and cook for 2 minutes.
Remove from heat and add butter and vanilla.
Slice 2 bananas into baked shell. Pour mixture over bananas. Chill.
Just before serving spread with whipped cream and remaining banana.
