1/4 c soy sauce
2 T lime juice
1 tsp honey
1 clove garlic, crushed
1/2 tsp finely chopped fresh ginger
1/4 tsp dark sesame oil
1/8 to 1/4 tsp red pepper flakes
1/2 c grated cucumber
1/2 c grated carrot
1/4 c sliced yellow bell pepper
2 T thinly sliced green onion
18 small lettuce leaves or Bibb lettuce leaves from inner part of head
Sesame seeds (optional)

Directions:
Directions:
Combine soy sauce, lime juice, honey, garlic, ginger, sesame oil and pepper flakes in small bowl. Combine cucumber, carrot, bell pepper and green onion in medium bowl. Stir 1 tsp soy sauce mixture into vegetable mixture.

Place about 1 T vegetable mixture on each lettuce leaf. Roll up leaves; top with sesame seeds just before serving. Serve with remaining sauce. Makes 6 to 9 servings
