1 c. sugar
1 egg
1 tsp. baking soda
1 cup peanut butter, crunchy or smooth
(that's right, no flour!)

Directions:

Mix first 3 ingredients, then the peanut butter. Form small balls on an ungreased cookie sheet and gently mash with the tines of a fork. Cook 10 minutes or so at 350º until slightly brown on the edges.

My sister, Kathy, gave me this recipe. These are my go -to cookies when you have no ingredients on hand. They melt in your mouth, and are not sticky, but very delicate. I usually don't like peanut butter cookies very much, but these are awesome. I use crunchy peanut butter.
