1¼ cups dried pinto beans (1/2 pound)
6 cups water
1 lb. beef shank
1 cup chopped onion
2 tsp. thyme, crushed
dash of pepper
2 medium potatoes, peeled and diced (2 cups)
2 medium carrots, sliced (1 cup)

Directions:
Directions:
Rinse beans, place in large saucepan and add 6 cups of water. Soak overnight (or bring beans to boiling; reduce heat and simmer 2 minutes. Remove from heat, cover and let stand 1 hour). Do not drain. Add beef shank, onion, salt, thyme and pepper; bring mixture to boiling. Reduce heat, simmer, covered for 1¼ hours, stirring occasionally. Remove shank, cool. Cut off meat and dice, discard bones. Mash beans slightly. Add meat, potatoes and carrots to soup. Cover, simmer until veggies are tender, about 30 minutes more.
