1 C soft Butter
1/2 C sifted confectioners’ Sugar
1 tsp Vanilla
2 1/4 C Flour
1/4 tsp Salt
3/4 C finely chopped Pecans
Confectioners’ sugar for covering cookie

Directions:
Directions:
Mix butter, sugar and vanilla thoroughly. Blend flour and salt, stir in butter mixture. Mix in pecans. Chill completely in refrigerator. Preheat oven to 400º. Roll small scoops of dough into 1 inch balls in palm of your hands. Cookies will increase in size slightly while baking. Place on ungreased baking sheet. Bake 10 to 12 minutes until light brown on bottom of cookie. While still warm, roll cookie in confectioners’ sugar. Cool. Roll in sugar again.
