2 Tbs butter
2 oz. sharp cheddar cheese, grated
3 Tbs. flour
2 large eggs, separated
1/8 tsp. salt
1/8 tsp. dry mustard
½ C milk

In a 1 ½ quart saucepan, over low heat, melt butter.
Stir in flour, salt and mustard.
Lower the heat and gradually stir in the milk, stirring to keep smooth.
Cook over moderately low heat, stirring constantly until thickened.
Remove from heat and add cheese. Whisk until melted.
Whisk in egg yolks, one at a time.
Beat egg whites until stiff and fold into cheese mixture.
Turn into two individual soufflé dishes about 4 ½ “ x 2 “ that can each hold about 1 ½ cups.
Bake in preheated oven at 375° until puffed and brown for 20 minutes or until firm.
Serve at once as soufflés sink rapidly.
