Shrimp Gumbo Recipe

1 cup of oil (light oil such as canola etc. NOT olive...)
1 cup of flour
Salt & pepper
2 pounds of peeled shrimp (20-25 per lb size)
2 cups of fresh crab meat (blue crab is very good. 1 lb can Costco crab is excellent)
3 cups of chopped okra ( I use frozen)
1 onion chopped fine
6 green onions chopped fine
4 pods of garlic minced
1 bay leaf
Red pepper
Tabasco to Taste

Pour your first glass of wine and relax - you're in for the long haul for this gem!
Chop all your vegetables and peel shrimp before making roux.
In a large pot, add okra and cover with water. Bring to a boil, reduce to and simmer for 25+ min.
While the okra is cooking, I make the roux in an iron skillet.
After starting okra, begin roux
It is preferable to make the roux in a large iron or other heavy skillet
Pour the oil and then add the flour.
Stir VERY frequently at a medium heat until the roux is a dark brown (milk-chocolate brown - ~45 min)
Add the greens (not the okra) to the roux and cook until wilted (10-15 min)
Pour the roux and greens in the pot the okra has been cooking.
Add about two quarts of water and you might add a little more if the consistency
is too thick.
Add the shrimp, crab meat, garlic and seasonings.
Season to your taste, spicy or mild! :-)
Bring to a boil, reduce Cook slowly for a couple of hours, stirring periodically.
Taste and add salt as required
Serve over rice and French bread is
nice with the Gumbo.
I always put file' and tabasco on the
table for extra seasoning.
