1 1/4 cups chopped onion
1/2 cup salad oil
2 tbsp. salad oil
1 large can whole tomatoes
1 package taco seasoning mix
2 tbsp. picante sauce
1/2 cup salad oil
1 lb. Monterey jack cheese
1 pt. sour cream
1 tsp. salt and pepper

Directions:
Directions:
Saute onion in 2 tablespoons salad oil until tender. Add the tomatoes, taco seasoning mix and picante sauce. Mash tomatoes with spoon. Simmer for 15 to 20 minutes; set aside to cool. Fry the tortillas lightly in 1/2 cup oil for 10 to 15 seconds on each side. Do not let them get crisp.
Grate cheese. Put about 2 tbsp of cheese, 1 tablespoon onion and 2 tablespoons of sauce on each tortillas. Roll the tortillas and place them seam side down in a 2 quart backing dish. Pour the remaining sauce over the top of the rolled tortillas and sprinkle any remaining cheese over the sauce. Combine the sour cream and seasoned salt and spoon it over the tortillas. Sprinkle lightly with seasoned pepper. Bake at 325ºF for 25 to 30 minutes
