2 c. sugar
3 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 eggs, beaten
2 c. shredded zucchini
2 tsp. vanilla
1 small can crushed pineapple, drained
1 c. oil
1 c. walnuts - optional

Directions:
Directions:
In large bowl, combine sugar, flour, salt, soda, baking powder and cinnamon. Add the remaining ingredients. Mix well. Pour into two 4 1/2 x 8 1/2 inch greased and floured loaf pans. Bake at 325º for 1 hour 10 minutes or until done. Cool in pans 10 minutes, remove and cool thoroughly on rack.
