2 T olive oil
1 yellow onion, chopped
1celery stalk, thinly sliced
1 carrot, peeled and thinly sliced
1 clove garlic, minced
1 bay leaf
1 1/2 - 2 t. curry powder
1 small can diced tomatoes with juice – chopped a bit more
1 1/2 cups dried brown or pink lentils picked over and rinsed
6 cups chicken stock
1 small lemon, sliced
12 oz chopped fresh spinach

Directions:
Directions:
In a large saucepan over medium heat, warm the oil and saute onion, celery, carrot, garlic and bay leaf about 5 min, until softened. Stir in curry powder.
Add tomatoes and juice, lentils, stock and lemon slices. Bring to a simmer until lentils 30 minutes or until tender. Take out lemons and bay leaf. Don’t let lemons sit in broth!

Add spinach and simmer until it is wilted. Season to taste with salt and pepper.
