Cream 1 stick butter (softened) and 1 ¼ c. sugar
Add:
4 large eggs
2 cups flour
½ t. baking powder
2 t. vanilla
3 cups whole pecan halves

Directions:
Directions:
Divide dough among three mini loaf pans – approx 8 1/2 x 4” & 2 1’2 deep (can be aluminum)
Bake at 350 degrees for 30 min. Cool a few minutes and then take out of pans ** chill until cold or overnight.

Cut into very thin slices ( like melba toast) and lie flat on a baking sheet. Bake again at 325 for 10 minutes or until brown (they will be crispy when cooled!) They freeze very well.
OR

** You can wrap loaves in foil and freeze at this point and finish later. Take loaf out of freezer and defrost for about 10 min. Cook as directed above Make as much as you want and re-freeze the rest of the loaf.
