3 dried pasilla chilies or 1 can Ortega green chile
1 tbsp. plus 1 1/2 tsp. vegetable oil
1/2 c. chopped white onions
2 tsp. chopped garlic
1 tsp. ground cumin
1/2 tsp. salt
1/4 c. chopped cilantro
1/4 c. chopped parsley
1 3/4 c. chicken stock
1 c. long grain white rice

1. Peel chile. In saucepan heat 1 1/2 tsp. oil and add onions and chilies for 3 minutes. Add garlic, cumin, salt, cilantro, and parsley for 30 seconds. Remove from heat and put in blender with 1 1/2 c. stock.
2. Heat 1 tbsp. oil and add rice for 1-2 minutes. Add puree and cook about 2 minutes. Add remaining stock, stir, and cover. Simmer about 15-20 minutes. Let stand for 10-15 minutes and fluff with fork.
