3 C chopped potatoes
1 C water
½ tsp. salt
½ C celery, sliced thin
Dash pepper
½ C carrot slices, sliced thin
1 chicken bouillon cube
¼ C chopped onion
1 ½ C milk
1 tsp. parsley flakes
2 Tbs flour
4 oz. Velveeta cheese, cubed

Directions:
Directions:
Combine potatoes, water, celery, carrots, onion, parsley flakes, seasonings and bouillon.
Cover and simmer 15 to 20 minutes or until vegetables are tender.

Gradually add flour to the milk, stirring until blended. Add flour mixture to the hot vegetables, stirring constantly until mixed. Cook until thickened.

Add Velveeta cheese, stir until melted.

Makes six 1 cup servings.
