Crust:
1 1/4 graham cracker crumbs
2 T sugar
1/2 can coconut, 1/2 c
6 T butter, melted

Filling:
4 eggs separated
1 can condensed milk, 13 oz
1/2 c key lime juice
6 T sugar
1/2 t cream of tartar

Directions:
Directions:
Preheat oven to 350º. Mix all of crust ingredients together. Press into pie pan and bake for 10 min.

Once eggs are separated, remove white stuff that sometimes is in egg on yolk or clear whites. (These do not cook out when they are baked).
Combine condensed milk, egg yolks and lime juice in mixing bowl. Beat 1 egg white stiff. Fold into mixture and turn into pie shell.
Beat 3 egg whites and gradually add sugar and cream of tartar. Spoon over filling (like it to look like peaks and valleys).
Bake 350º for approximately 20 minutes or until egg whites are golden brown.
Chill for several hours before serving.

Crust note: This is for a regular size pie pan. I usually like to make larger pies and add 50% to this recipe. At beach it was doubled.

Filling: remember to increase filling by same % as crust
