6 medium baking potatoes
vegetable oil
1/2 c butter, softened
2 c ( 8 oz) shredded cheddar cheese,
divided (1 1/2 & 1/2)
8 oz sour cream
1/4 c milk
1 t chopped parsley, or chives
1/2 t salt
1/4 t pepper
paprika

Directions:
Directions:
Wash potatoes and rub with oil
Bake 400º for 1 hour or until done
Cut potatoes in half lengthwise
Carefully scoop out pulp, leaving shells intact
Mash pulp, butter 1 1/2 c cheese, sour cream, milk, chives, salt and pepper
Stuff shells with potato mixture.
Sprinkle tops with cheese and paprika
Bake 350º for 20 minutes
