Ingredients:
1/4 C butter
1/4 C flour
2 C milk
2 cans of tuna
2 Tbsp dry onions
OR
1/2 onion, chopped
1 tsp garlic powder
Dash of Seasoning Salt
1 C. grated cheddar cheese

Directions:
Directions:
Melt butter in medium saucepan. Add flour and stir into the butter. Allow flour to cook in butter for at least one minute, so it doesn't have that raw-flour chalky taste.

Add milk and stir until thoroughly combined. Simmer until the sauce thickens. Add onion, garlic salt, seasoning salt, and cheese. Stir until cheese melts. Add drained tuna, and stir till well blended. Taste and adjust -- may need more salt.

Serve over hot rice. Can garnish with green onions. Flavor with soy sauce to taste.

Kimball asked me to add this to the cookbook. It is a comfort food in our family. We never serve this over noodles, as do many families. Rice for the win!
