1 lb ground meat
½ tsp salt
Oil or spray pam
1 pkg taco season
¼ cup water
2 cups shredded Colby jack cheese, divided
1 large can mild enchilada sauce
1 pkg flour tortilla’s

Directions:
Directions:
In large skillet brown ground meat in a little oil or spray pam, add ½ tsp of salt. When browned drain and return to pan. Add taco seasoning and ¼ cup of water, mix well and stir over medium heat, add 1 cup of cheese to meat mixture and stir, remove from heat. Spray non stick cooking spray in 9 x 13 baking dish, spread a couple of Tbsp of enchilada sauce on bottom of baking dish. Add 1 large tbsp of meat mixture into center of a tortilla and spread to make a line of mixture across center. Roll up tortilla and place seam side down in baking dish. Repeat process with meat mixture and tortilla’s until all mixture is gone and baking dish is full. Should make about 8-10 tortilla’s (may pre-divide meat mixture to make sure you have enough for all tortilla’s) . Cover with remaining enchilada sauce and sprinkle with remaining cheese. Place baking dish in preheated oven of 350 degrees and bake for about 30 minutes. Cheese will be melted and bubbly.
