Oxtail or other beef suitable for soup
Salt and pepper to taste
2 beef bouillon cubes (more if desired)
1 medium onion
1 stalk celery
Carrots
1/2 cup rice or barley
Tomato juice

Directions:
Directions:
Brown oxtail or other beef in oil and season with salt and pepper. Place in Crock-Pot with water and beef bouillon cubes. Cook on high 4-6 hours until meat falls off the bone. Transfer to a soup pot and add 1 medium diced onion, 1 stalk of celery and some carrots. Cook 15 minutes and then add approximately 1/2 cup of rice or barley along with tomato juice to your taste. Cook another 30 minutes and enjoy.
