1 lb fresh peas
1 lb orzo
1/2 c olive oil
1 tbs white wine vinegar
salt and black pepper to taste
1 tbs chopped fresh basil
1 yellow pepper finely chopped
2 bunches scallions very finely chopped

Directions:
Directions:
Shell the peas and drop in boiling water. Cook for 3 min or until barely done and drain w cold water. Cook orzo until tender but still has some bite to it, approx 8 min. Drain and transfer to a bowl. Add the oil, vinegar, salt and pepper and let cool to room temperature, stirring occasionally. Add basil, pepper, peas and scallions and toss thoroughly. Serve at once.
