DRESSING

2 T red wine vinegar
1 T fresh lemon juice
1 clove garlic, finely minced
1.5 tsp. dried oregano (some people delete this)
1/2 cup oil

SALAD

1 head romaine lettuce
2 medium cucumbers, peeled, seeded and cut into 1/2-inch cubes
3 tomatoes cut into wedges
1/2 red onion (optional), sliced paper-thin
1/2 lb. feta cheese crumbles
1/2 cup kalamata olives, quartered

DRESSING

Whisk all the ingredients together or put in a small jar and shake. Season with salt and pepper to taste.

SALAD

Chop the romaine into bite-sized pieces. Put in a large bowl and combine with the cucumbers, tomatoes and red onion.

Just before serving, add just enough dressing to the bowl to coat the lettuce. Top with feta and olives.
