DRESSING

3 T. balsamic vinegar
1 tsp. Dijon mustard
1-2 tsp. maple syrup
1/2 cup olive oil
Kosher salt and pepper

SALAD
6 cups arugula
1 small head radicchio cut into quarters, cored and thinly sliced (about 2 cups).
1 large can mandarin oranges (washed)
1/3 cup goat cheese
1/3 cup walnuts, toasted and chopped

DRESSING
Whisk together or mix in a small jar with a top all the ingredients and taste for salt and pepper.

SALAD
Chop or tear the arugula into bite-sized pieces and put in a large bowl with the radicchio. Add just enough dressing to coat the leaves and mix well.

Just before serving top with the orange sections, cheese and toasted walnuts.
