2 cups sifted all purpose flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
5 tsp. ground cinnamon
3 eggs
1 cup vegetable oil
1½ cups sugar
2 medium sized zucchini grated (2 cups)
2 tsp. vanilla
1 cup raisins
1 cup walnuts

Directions:
Directions:
Sift flour, baking soda, salt, baking powder and cinnamon onto wax paper. Preheat oven to 350º. Combine eggs, oil, sugar, zucchini and vanilla in large bowl; beat until well mixed. Stir in flour mixture until smooth. Stir in raisins and nuts. Pour mixture into a greased 13x9x2 inch pan. Bake in preheated oven for 40 minutes or until toothpick inserted into center comes out clean. Cool 15 minutes in pan on a wire rack, turn out; cool completely.
