6 thin steak cutlets for Rolladen
1 C or more chopped onions, divided
6 slices bacon
1 large dill pickle, cut into 6 strips
1 C flour
3 T bacon fat or oil for frying
Salt, pepper, garlic salt

Directions:
Directions:
Preheat oven to 350. Sprinkle each steak with salt, pepper, and garlic. Cover with chopped onion. At one end, place ½ slice bacon and one strip pickle. Roll steak up tightly and tie with two strings, one at each end. Dredge rolls well in flour. Heat bacon fat or oil in large, heavy frying pan and brown rolls on all sides. Remove meat to casserole dish. Using left-over flour, sprinkle 3 rounded tablespoons over meat. Add a cup of water to frying pan, scraping up bits sticking to pan. Pour this over meat, mixing liquid into flour. Put any remaining onion on top of meat. Arrange ½ slice bacon over each steak roll. Cover and bake at 350 for ½ hour – then turn to 325 and bake for an additional hour, checking to see that there is sufficient liquid. Makes its own gravy.
