2 C. all-purpose flour
4 1/2 T. sugar
3/4 tsp. salt
4 T. unsalted butter
1 3/4 stick chilled cut into 1/2" cubes
1 large egg + 1 egg yolk
2 T. cold water 1 or more
1 1/2 C. cherry jam
1 tsp. grated lemon peel
1/2 tsp. almond extract

Blend flour, sugar, & salt in processor 5 sec, Add butter, using on/off turns, blend until coarse meal forms. Add egg & extra yolk & 2 T. water. using pulse/button, blend until moist clumps form, adding extra tsp. water if dry. Gather dough into ball. Divide into 2 pieces, 1 slightly larger. Wrap in wax paper & chill 1 hour, or overnight. Roll out larger dough piece on floured surface to 12-in. round. Transfer to 9-in. tart pan with removable bottom. Fold in overhang & press, forming double-thick sides. Roll 2nd dough on floured parchment paper to 10-in. round, cut rounds in 1/2 in. wide strips. Chill strips on parchment in refrig.
Preheat oven 375º F. Stir jam, lemon peel, & almond extract in small bowl to blend. Spoon filling into crust in pan. Arrange pastry strips atop filling in lattice pattern, spacing 1 1/2 in. apart. seal strips to crust edge & trim ends. Bake 55 min. Cool tart in pan.
