4 large onions, diced
4 oz butter
2 tsp tomato paste
20 oz frozen peas
chopped parsley
salt & pepper
2 lbs spaghetti

Directions:
Directions:
- Cook onions gently in butter without letting them color, adding a little water from time to time
- Add tomato paste & peas (thawed), season with salt & pepper
- Add a large spoonful of hot water
- Cook at medium heat for about 15 minutes, until the peas are cooked. Add butter and chopped parsley before putting on the spaghetti

This is a great, ultra-easy dish from her Italian cookbook (in Italian), which she could read (go Mummy!)

It also works with rice or other grains. You can substitute olive oil for the butter. It's not necessary to pre-thaw the peas, and you can add chick peas to make it more filling and get more protein. You can add other vegetables too, but it's nice simple.
