5 chicken livers
2 gizzards
1/2 lb. ground beef or pork
Olive oil
1 bell pepper, chopped
1 large onion, chopped
2 cloves garlic, minced
3 stalks celery, chopped
1/4 tsp. red pepper (or 1/8 to taste)
1/4 tsp. thyme
2 bay leaves
2 cups water
3 cups rice
4 green onions, chopped
1/4 cup parsley, chopped

Boil chicken livers and gizzards until done. Saute ground meat in oil until browned. Add bell pepper, onion, garlic and celery. Stir often. Cook until vegetables are limp.

Put chopped gizzards and chicken livers in food processor and pulse until they are ground well. Add to the meat/vegetable mixture, then add the red pepper, thyme, bay leaves and 2 cups of water. Cook slowly for about 30 minutes. Remove bay leaves.

Meanwhile, cook the rice. Add rice to meat mixture and mix well. Add green onions and parsley for crunch. Remove from heat and let set 10 minutes.

This is excellent with any pork dish, from a rack of ribs to pork chops, or any fowl. Great party fare. The recipe can be easily halved for family size.
