1 lb. lump crab meat
1 large lemon, rolled vigorously and juiced
1/2 teaspoon capers, drained and dried, chopped
Whiff of ground red pepper
White pepper (sprinkle lightly)
1 tbsp. extra virgin olive oil
3 green onion tops, finely chopped
1/4 tsp. Sauterne cooking wine

Directions:

Mix together all the ingredients except the crab meat. Spoon mixture very gently over lump crab meat, and toss very gently with hands to avoid breaking up the crab meat.

Refrigerate and serve.

This is a jewel that can be served as an appetizer with crackers, as a luncheon salad on a tomato and leafy greens of your choice, or at a cocktail party.
