6 cups chicken broth
2 1/2 cups chicken, cooked and chopped
1/2 cup white onion, finely chopped
1/2 cup celery, finely chopped
1 1/2 cups cooked rice or small cooked noodles
Green onion tops, chopped (for garnish)

Directions:
Directions:
In a large pot, combine the first four ingredients, heat, then add the cooked rice or noodles at the end of cooking. When serving, top with green onion garnish. Instant good soup!

My husband Joe came home for lunch every day for 50 years (except during the time he served in the Air Corps on a B29 bomber in the Pacific during World War II). It was when we were both working (before he went into the service) that I started making our lunches every day. We would invariably have a thermos of chicken soup, sandwiches, and “dainty little condiments” as Joe called them.

Joe went off to war in 1944. The below photo is of him stationed in Saipan in the South Pacific. Serving in the Air Corps, he was a skilled Morse code operator (sending and receiving from the ground and air). The building he is standing in front of says "War Information Office." I'm not sure what all that office did, but maybe that was where he sent and received messages.
