2 bunches fresh spinach, stems removed
1/2 stick butter
6 tbsp. flour
2 cups chicken broth
1 cup milk
1/2 cup whipping cream
1/2 tsp. salt
1/2 tsp. white pepper
1/2 tsp. nutmeg
1 bunch green onion, chopped
1/4 cup vermouth
Parmesan cheese, grated (for garnish)

Directions:
Steam spinach for 5 minutes, set aside.

Make a cream sauce by melting the butter in a pot, then add the flour stirring and blending until smooth. Slowly add the chicken broth, milk and cream. Stir constantly. Add salt, white pepper, nutmeg, green onions and vermouth. The consistency of the soup should be light and thin. Add the spinach. When serving, sprinkle a little Parmesan cheese on top for garnish.
