2 cups shredded, cooked pork
1/2 cup barbecue sauce
2 tablespoons chopped cilantro
1/2 teaspoon salt
1/2 teaspoon pepper
17 1/4 ounce package frozen puff pastry sheets-thawed
2 eggs beaten with 2 tablespoons water

Directions:
Directions:
Preheat oven to 400º. Line a baking sheet with parchment paper or foil. Prepare the filling by mixing together the pork, barbecue sauce, cilantro, salt and pepper in medium bowl. Place a sheet of puff pastry on lightly floured area. Cut the dough into 3" circles using a biscuit cutter or glass. Place a generous tablespoon of the filling in the center of each circle and fold the circle into a half-moon shape. Brush the edges and top with the egg mixture, then press with a fork along the edges to seal. Transfer the empanadas to the baking sheet. Repeat the process with a second pastry sheet. Bake the empanadas for 10 minutes. Serve hot
