2 tsp. (1 package) active dry yeast
1 tsp. honey
2/3 cup warmed milk
2 ½ cups all-purpose flour
1 tsp. salt
3 eggs at room temperature
5 Tbsp. softened, unsalted butter cut into small pieces
1 cup grated cheddar cheese

In the bowl of a mixer, combine yeast, honey, and 1/3 cup of the warmed milk. Let sit 5 minutes until the mixture foams slightly. In a separate bowl, whisk together flour and salt. Using the paddle attachment on the mixer, begin slowly adding the flour to the yeast. Add remaining 1/3 cup milk.
Increase mixer speed and add eggs one at a time. Stop the mixer once or twice to scrape dough down from the sides of the bowl. After 3-5 minutes, add butter in small chunks and continue to mix another 3 minutes. When the butter is added, the mixture should start forming into sticky dough. Scrape the dough off the sides of the bowl. Sprinkle the dough lightly with flour, cover the bowl with plastic wrap and a cloth towel and let sit for 1 ½ hours. The dough should rise significantly. Punch the dough down and pull it out onto a floured surface. Cut or pull off 12 even chunks and form them into round rolls with your hands or by rolling the dough against the counter top. In a buttered 9x11 baking pan, space the rolls out evenly. Cover the pan with a cloth towel and let rise 1 1/2 hours. Preheat the oven to 375 F. Sprinkle the grated cheddar cheese over the top of the rolls.Bake the rolls for 25-30 minutes, until lightly browned on top.
