3/4 lb of ground beef
1 can (28 oz) of diced tomatoes
1 can (15 oz) of tomato sauce
2 cans of dark red kidney beans, drained
1 medium onion, chopped
1 clove of garlic (you can omit this or reduce it if you don't care for garlic)
1 anaheim or jalapeno chili, seeded and chopped
2 cans (4.5 oz each) of chopped green chilis, undrained
1 to 2 T of chili powder
2 tsp of cumin
1/4 tsp of pepper
3 T of salsa

Toppings:
Cornbread
Crackers
Cheese-sharp cheddar
onions- white and scallions-chopped
spaghetti, cooked
sour cream
salsa

Brown ground beef and chopped onion. Drain fat and place into Large Stove top cooking pan. Add remainder of ingredients and simmer on low for at least one hour; more if you have the time.

This is an easy prep meal. It takes a little time to cook because as it cooks all the flavors become better.

The spaghetti idea for a topping is a midwest thing, and it is very good in the chili.
