1 cup packed light brown sugar
2 large eggs whites
1 cup pure pumpkin
1/4 cup canola oil
1/3 cup low-fat plain vogurt
1 t vanilla
1 cup all purpose flour
3/4 cup whole wheat flour
1 1/2 t baking powder
1 t ground cinnamon
1/2 t nutmeg
1/2 t baking soda
1 t salt

Preheat oven to 350º. Spray 8.5 x 4.5 metal loaf pan with spray.

1. In large bow, with wire whisk, combine brown sugar and egg whites. Add pumpkin, oil, yougurt, and vanila. Stir to combine.
2. In medium bowl, combine dry ingredients. Add flour mixture to pumpkin mixture. Stir til just combined. Do not over mix.
3. Pour batter into pa.
4. Bake 45 to 50 minutes.
