1 T. extra virgin olive oil
4 garlic cloves, chopped
1 onion, chopped
1 (10.5 oz.) can cream of mushroom soup*
1 (10.5 oz.) can cream of chicken soup*
1 (10.5 oz.) can cream of celery soup*
1 (10.5 oz.) can cheddar cheese soup*
1 (15 oz.) can chicken broth*
1 (15 oz.) can diced tomatoes
1 c. salsa (chunky)
1 (4.5 oz.) can diced green chilies
1/4 c. fresh cilantro, chopped
1 tsp. red chili powder
1/4 tsp. cayenne pepper (optional)
Salt and pepper, to taste
4 chicken breasts, cooked and chopped

*Fat-free, reduced-fat or less-sodium soups work well.

Directions:
Saute chopped garlic and onion in 1 T. extra virgin olive oil until tender. Add remaining ingredients and simmer for one hour. Top with tortilla chips, fresh cilantro and cheddar cheese.

Serves 8.
