1 onion
3 cloves garlic, minced
2 T. extra virgin olive oil
4 large vine-ripened, fresh tomatoes (equal to approximately 8-10 Roma tomatoes or a 28 oz. can of peeled, diced tomatoes)
2 (6 ounce) cans tomato paste, no salt added (use one 12 ounce can of plain tomato sauce if you prefer a lighter sauce)
1 T. dried basil
1 T. dried oregano
2 bay leaves
1 T. white sugar
1/2 tsp. crushed red pepper flakes
1/4 c. red wine
1 pound Italian sausage, reduced fat or turkey-based

Optional: red and green peppers, fresh mushrooms and Parmesan cheese, to taste

Heat olive oil in a large saucepan or Dutch oven. Saute onions, garlic and optional veggies until tender, 2-3 minutes. Add remaining ingredients (except sausage) and simmer over low heat for at least one hour (if you have an afternoon, two or three hours is preferable). Cook and brown sausages in a skillet. When browned, place in sauce and continue to simmer. Remove bay leaves and serve over hot cooked noodles.
