1 ½ cup oil
2 Cups sugar
4 eggs
2 cups carrots grated
2 ½ cups crushed pineapple, drained
2 ½ cup flour
1 teaspoon baking soda
½ teaspoon nutmeg
2 teaspoon cinnamon
½ teaspoon salt
1 teaspoon vanilla
1 cup walnut pieces (optional)
½ cups raisins (optional)

Frosting:
½ cup butter or margarine
1 (8 oz.) pkg. cream cheese
1 (1 lb.) box powdered sugar
1 teaspoon vanilla

Directions:
Directions:
Blend first 5 ingredients together until smooth. Mix flour, baking soda, spices, and salt; add to first 5 ingredients and blend until smooth. Add raisins. Spray a 13 x 9 inch pan (I use glass) with Pam…Pour cake mix into pan and bake at 350 degrees for 50 – 60 minutes

Frosting:
Combine butter, cream cheese, and vanilla. Cream well. Add sugar gradually, beating well. If mixture is too thick to spread add small amount of milk.
