Ingredients: 1/2 pint heavy cream 1/2 lb cream cheese (softened) 1/2 lb butter 2 C flour 2 beaten egg yolks sugar and cinnamon for sprinkling
Filling: 3/4 C chopped walnuts 1/2 C sugar 1/2 C seedless raisins 1 tsp. cinnamon

Directions:Preheat oven to 400 degrees In a large bowl combine cream, butter, softened cream cheese and flour. Mix thoroughly but quickly. Shape into a square. Cover with wax paper and refrigerate dough overnight. Next day, cut dough into 4 pieces. Put 3 back in refrigerator. Do each batch separately. On a floured board with a floured rolling pin, roll dough out as thin as possible (about 1/4 inch thick). Keep lifting the dough and flour the board as you go. Cut the dough into small rounds. Butter cookie sheet very lightly and place cookies on it. Put a mound of filling in center of each cookie. Fold over and seal edges with floured fingers. Brush tops with beaten egg yolk. Sprinkle tops with cinnamon and sugar mixture. Check cookies after 7-8 minutes (They burn easily). Bake on middle rack for 10-12 minutes until bottoms are a nice golden brown. |
