Kori's Homemade Kahlua Recipe

12 cups water
12 cups sugar
1 cup brown sugar
2 cups instant coffee crystals (I use Folger's)
1 tsp. salt
2 tsp. Jamaican allspice
5 vanilla beans
6 oz. pure vanilla extract (preferably Mexican vanilla)
10 cups vodka (one gallon + one fifth)
brown bottles (5 fifths or 10 pints)

In the largest pot you can find... mix water, sugar, brown sugar, coffee, salt, allspice & 1/2 of the vanilla beans (split lengthwise & scrape out seeds, but put both seeds & lining in mixture). Bring this to a boil, stirring until sugar is dissolved.

Reduce heat & boil just above a simmer until mixture is reduced to about 14 cups of liquid (or the consistency of a thick gravy).

Remove any leftover vanilla bean lining with a slotted spoon. Remove from heat. Once cooled, add vodka & vanilla. Mix well.

Place 1/2 of a split vanilla bean into each fifth (if using pints, use 1/4 split bean) & fill each bottle with mixture. Store bottles in a cool, dark place for a minimum of 30 days.

I have given this out as holiday gifts in the past... which means you have to make this prior to Thanksgiving. The longer it sits, the better.

When mixing the perfect white Russian (according to Kori), fill cup to top with ice. Add equal parts of this Kahlua, a good quality (preferably vanilla flavored) vodka and half & half (whole milk is an ok substitute, but...)
