1 pound ground sirloin
1/2 medium onion
1 teaspoon of garlic
1 can of whole kernel corn (drained)
1 package of taco seasoning
2 boxes jiffy cornbread mix
Extra Virgin Olive Oil
2 eggs
2/3 cup of milk
Non-sticking spray

Directions:
Directions:
Coat bottom of pan with extra virgin olive oil. Saute onion and garlic. Brown 1 lb. ground sirloin and add taco seasoning . Let simmer for 10 minutes. Fix jiffy cornbread according to the box. Add drained corn. Add cream of corn and cheese. Add meat mixture and mix well. Pour into 13"x9" pan sprayed with non-sticking spray. Bake at 375º 30-40 min.
